Fallout 1 & 2 are classic highly respected games, but they're NOT easy. The later ones moved to a different style (more FPS). Might feel too dated for you.
Heretic + Hexen... i played a bunch multiplayer. They're really dated graphically but if you're playing with other people it's fun as heck to turn people into chickens (or I think it's pigs in Hexen) and kill them. Outside of multiplayer though I don't know how fun it is.
Quake is the same. Fantastic multiplayer. Otherwise... no real need to play and I doubt you'll find many people playing Quake these days.
DOOMs are classic but outdated now. The new DOOMs are a lot of fun but not available. Though DOOM eternal has this SUPER annoying enemy that I know made more than a few people quit.
Dishonored - a lot fun. Only issue with this game is they give you all sorts of cool options and powers but you can't really use them if you want a decent ending (which is kind of lame to give the option of cool abilities but not really let you use it).
The Evil Within - if you like Resident Evil style games, this game is a lot of fun. The first game did have a problem with bad camera angles and not so clean controls which will get you killed in b.s. ways but its still fun. The sequel is better in that they eliminated a lot of the worst problems of the first. I really like these two games (well, if you can get past the camera angles and bad controls of the first).
Wolfensteins are pretty fun, though I only played the original (which is SUPER dated but it's one of the earliest FPSes) and the remakes (New Colossus and New Order).
Prey to me was *almost* a good game. There's a lot to like about it but I found combat to be... not great especially compared to FPSes with good combat. There's also a terribly designed enemy that will pop up and chase you. You have two options - hide until it leaves or "kill" it. If you kill it, it comes back later just like if you hide from it. Ammo is scarce though so it's stupid to waste ammo on it so you'll want to hide from it. Hiding from it is pretty easy actually. But you have to hide for like 5 minutes before it leaves. Which means you find a place it can't follow and then you... stare at the timer for the rest of the time. It's boring AF. The good thing is that enemy is only there for part of the game. But yeah if it weren't for the forgettable combat (and that annoying enemy) and a messed up late game sequence (they might've fixed it; the developers admitted it was poorly made) the game was actually quite good.
Elder Scrolls were the precursors to Skyrim (which is Elder Scrolls V), but they'll look super dated comparatively.

I'm going to be deeply in the minority on this but Commander Keen was for me what Mario and Sonic were for a lot of other folks growing up.

But aside from that I'd say Fallout 2 and Fallout: New Vegas are two of the best games ever made, if you're not put off by some dated gameplay.

I loved Prey. One of the few games I've finished in the last couple of years...and I've finished it thee times now. Didn't get into the Mooncrash DLC much. But it's still in my queue. I may one day.

Call of Cthulhu is the best Lovecraft game that I'm aware of. It's based on the Novella "Shadow over Innsmouth." I recommend playing the game and reading the novella around the same time.

Return to Castle Wolfenstein is one of my favorite first person shooters ever. I have no idea why it's only ever talked about for its multiplayer, but I'd say its single-player campaign is wonderful. It's also got a spooky level.

I enjoy playing my games to coincide with the seasons, so I recommend playing Cthulhu in October (for Northern Hemisphere) or during a dark and deary time. I recommend RTCW anywhere from late October to February because it has strong horror elements and strong snowy/cold elements.

I feel like Doom 3 is an underrated game. I really loved it, though I only see the BFG edition here. I also loved Quake 4. Both are only 60% off, but worth it. I love love love the biomechanical aesthetics of, I think, both games. I haven't played the new Doom games, but they look wonderful. However, they look more cartoonishly fun than Doom 3. That looks really fun, but I also enjoy a more serious tone too, and Doom 3 has a great serious tone for the Doom lore that you can't get anywhere else.

Quake IV's stroggification scene is one of the great scenes of gaming. If you're going to play the game, don't spoil it for yourself, but if you're not going to play the game, you should go check it out on Youtube.
