As someone who has never owned one of Arcade1Up's products but is interested,
How easily modifiable is this cabinet (as well as others)?
How difficult would it be to get this working with other Light Gun game ROMs (if even possible)?

As far as I know, this T2 isn't moddable (yet), as no one has figured out how to. Same with the Arcade 1up Big Buck Hunter machine which has been out for a long time...

As far as the other machines, it depends on what generation you get. Some of the newer ones like the Simpsons run off Android and it's a lot easier to mod as opposed to the older machines..

AFAIK it uses Sinden light guns, which are pretty high end guns. Maybe watch an unbox video to see the hook-ups for the guns, and compare them to the ones you purchase separately and that may tell you something. Its a good question though as the normal sinden light guns are supposedly pretty awesome, but I am not a huge fan of the Terminator game, especially since I havent heard great things about this game.
