If you're buying Lego sets for the express purpose of replacing the objects they're designed after for similar pricing, I don't think you're the target audience. It's a Lego kit. You're paying for the experience of putting it together and enjoying the tangible results. Do 1000-piece 2D puzzles of succulents also baffle you?
For some people it's nice because they have to go into an office for work. I don't have this set, but I've thought about getting it because I have other Lego sets at the office and buying this would add a bit of ambiance without the need to water and re-pot the plants when they grow too big. But to each their own I guess.
It seemed implied by your exact wording:

"I can't keep up with this world."

You really should just step away from this one. The incoming semantics debate from you is just further opportunity for you to embarrass yourself even more than the edit you already made to your first post. It's really okay to learn from your oversights.

It isn't selling out and to see a price cut at multiple retailers might indicate this set is cooling down

I don't think $5 off is the best deal when I can get points and the pirate set on Lego. As for how much more expensive it is than real plants,
plant fans probably aren't buying this set, Lego fans are. I want it because I enjoy building Lego that I can keep around year long. I don't care about real plants no matter how little water they require.

Haha you would think! But I went to Lowes and bought the "few dollar" succulents that are actually $6 a piece for the 11oz mini pots and spent over $60 for them all to die on me...so really this is cheaper and will never die!

Or moderate Lego fans with wives who are plant people. I like putting together Legos but having an ECTO-1 or whatever permanently out on display isn't really my vibe. I've got the bonsai tree and the flower bouquet and they look cool and stylish on a bookshelf in a zoom background. Even better mixed in with real plants.
