The Promotional Companion Pass is valid from January 4 to March 4, 2023 and allows you to designate one person to fly with you, free of airline charges (does not include taxes and fees from $5.60 one-way) on flights purchased by you, from January 4 to March 4, 2023, booked through Southwest, and completed between January 4 and March 4, 2023. No Rapid Rewards points or tier or Companion Pass qualifying points will be awarded for flights taken by the Companion when flying on a Promotional Companion Pass or Companion Pass reservation. You may change your designated Companion up to three times while you have Promotional Companion Pass. If you earn Companion Pass in 2023 by earning 125,000 Companion Pass qualifying points or flying 100 qualifying flights, any changes to your designated Companion during the time you have a Promotional Companion Pass will reduce the number of changes you can make to your designated Companion in the 2023 calendar year. For example, if you earn a Promotional Companion Pass through this promotion, change your designated Companion twice during the validity period for Promotional Companion Pass, and later in 2023 earn Companion Pass, you would only be able to change your designated Companion one more time in 2023. Companion Pass is non-transferable.

If we have 2 children, 7 and 3, is it best for both of us parents to register for this promotion, and then get our kids registered as companions?
The other way I thought I could fly and make my spouse my companion, but then we'd be paying for 2 more tickets when we fly. Didn't make sense to me. Am I missing anything?

So for the scenario, i'd buy one to get a companion for my 8 year old and i'd have my wife buy one to get my 5 year old as a companion. That way I only have to pay for 2 tickets for a family of 4 to travel.

Basically when you have a companion pass, you choose one person to fly for free (+ tax/fees) when you book your own ticket.
So if you have a companion and are traveling once a week, you can bring that companion along with you every time and you're only paying their taxes/fees ($12 roughly).
If you always fly with your wife, put her as your companion and fly your kid this year so he can take the other kid as his companion. Or if you're always flying with one kid or the other, have her get the CP and you can still get some flexibility by changing your companion twice
If you buy 2 one/way ticket for you and SO it wont qualify, it has to be 2 one-way fir yourself only!
