For mountain bikes, you need very low end gearing and if you're like me you don't need very much top end gearing. I simply enjoy the free ride going downhill. I just need very low end gears to get up the hill. 1x is the most popular for mountain bikes because an ultra high top end gears are not necessary, the sequential shifting is far more intuitive, and the narrow-wide chain ring up front helps prevent chain drops. This particular bikes has a 30T up front and an 11-40T in the rear. 30T combined with a 40T rear will climb moderate grades, but not super steep trails. I'd want some better low end from this bike and would prefer a 46T rear. Since it's a cassette, that's easily upgradeable in the future. The Microshift Acolyte set is 12-46T and under $100 if you can install it yourself. It has a clutch too.
Same goes for neighborhood riding. Past 20mph, most people simply enjoy the free ride going down hill. You don't really need much gearing past 20mph, unless you really want to make good time.
Road bikers are the ones that need alot of top end and low end gearing.

But here, the stem is attached to the handlebar and the whole assembly has to be attached to the fork. This is stupid. The only reason I can think of is it does save about 0.5" in box height judging by the video. So that's something.
I stand on my left foot while swinging my right foot over the seat, until it comes to rest on the right pedal, while simultaneously putting my butt on the seat. When I'm ready to move, I lift my left foot and put it on the pedal. I thought that's how everyone did it.
For me, the ability to stand over a frame is all about safety. The last thing I ever want to do is wind up on the ground because I'm afraid the top bar is going to crush my groin. With frame construction technology today, I just don't see the benefit of preferring a frame design that doesn't allow the rider that extra margin of safety.

I watched the unboxing/assembly video and this is something he makes a point about - the front fork is held in entirely by a piece of cardboard and the cap.
I was wondering how he was going to fill 30 minutes unboxing and assembling a bike - bikes aren't like they used to be - I can recall assembling and ENTIRE bike from PARTS - now that's assembly - putting the front tire on and the handlebar isn't much "assembly".
But since you mention it, I see folks sitting at red lights on motorcycles all the time with both feet on the ground.
Dirt bikes are a different story. They have to be high due to the extreme suspension travel.
I can guarantee you that if you ever had a situation where you're casually riding in the street/sidewalk:parking lot, maybe just a few mph, and you have to make an emergency stop, you'd appreciate being able to put both feet on the ground immediately after stopping versus trying to catch the bike and yourself on one foot or your tiptoes 😂

Motorcycles and dirtbikes have 2 wheels and handlebars. They also get into situations just like bicycles but at much higher speed and with much more weight to manage. The fundamentals are very similar.
I never said motorcycles couldn't have both feet on the ground if you're tall enough. But I know just as many people that can't flat foot a crotch rocket then people that can. When the bike comes to a stop, you have about 2 seconds to stick that leg down on the side that's leaning. You won't tip over right away. When I stop at a light, I usually keep my right foot on the brake and my left leg on the road center. That way I can sit up and relax my hands.

Are you saying you've seen a situation where someone makes an emergency maneuver (either a stop or a turn, etc) to avoid a collision where the ability to slide off the seat and plant both feet on the ground would not have prevented them from falling over?

Are you saying the REI site I poster earlier is somehow wrong about their stand over advice for bicycles?
