it appears the only way to setup and control the router is through the app
It means the the setup could be connecting to your router through an external server.( china?)
Which follows is that your router has basically a backdoor either to the app ( direct wifi or to the external server.
There is no option to setup using a direct Ethernet connection.

At least that the way I see it.

These are dual band, so a hardwired connection is recommended for each unit. Tri band has a dedicated wireless backhaul that connects all the units.

Is this too long in the tooth for today's day and age
I have the Google OnHubs and those are struggling to keep up. So I am looking to upgrade.
Should I get a new gen dual band AC, Tri-band AC, AX or AXE?

These are fine as long as you don't have more than 100 devices. I don't know if that limit is a hard limit or if that's just where the hardware begins to struggle, but this number is documented in TP-Link's literature. As others have stated, you'll want a wired backhaul connecting the satellite units to the main unit. You don't have to do that, but speeds will suffer pretty significantly if you don't do that.

Probably is time for me to switch to this, I have another AC1200 mesh system but recently they disconnect from the main hub and I need to restart them again. It is becoming annoying. I tried to move to Wifi-6 but had issues with old smart devices.

Should cover a 2200ft house, for best results the main unit should be somewhere in the middle between floors so your not daisy chaining all the units which lowers performance after each hop.

While your concern is valid, its the way all of the major brands are now doing it when using mesh kits, all of them require an app. The only exception is netgear business mesh kits which give you the option of either or.

Not much of an upgrade at all, a very lateral move, I would look for wifi 6 mesh kits but all depends how much you want to spend, the best kits off course would be the triband wifi 6 but then your looking to spend a lot more.

If this is hooked up to a laptop via ethernet cable in one of the rooms, will it stop from cutting internet connection every time a car passes by?

A car passing by outside your house should not be cutting off your internet in the first place, you have greater issues if your seeing a problem like this. Sounds like you have environmental and other issues in your area.
