Is this a significant upgrade over the Hi-F iman HE-560
They are noticeable with a good enough amp to justify the upgrade, yes. They are an end-game class headphone.
If you have to buy a new amp to power these correctly then don't do it. Buy easier to drive cans with a budget that includes what an additional amp would have added.

I am guessing the Magni/Modi Schiit stack won't do it?

I have a Monoprice THX 887 and a Schiit Modius that drive these. They sound great. Not sure if a more powerful amp would help, but to my ears they don't really need it.
They do sound noticeably better after using the Peace equalizer on my computer. Downloaded an equalizer profile that really makes them shine.
The hinge and yoke design looks very similar to the HE4XX's, which is to say it's going to fail as mine did less than a year out of warranty, and you're going to be forced to use zip ties to keep the ear cups attached to the head band. I didn't listen to the warnings about HIFIMAN quality at first. But now I know. Avoid unless you can get some sort of extended warranty.

Magnius, yes. I own both headphones and both amps.
