They are packaging the food without oxygen (using nitrogen and/or absorber packets) so that nothing organic can possibly reproduce and no oxidation can occur. Yes a good vacuum seal will get most foods to last a long time but not the 20+ years you get when you properly remove ALL the oxygen. Normal dry goods properly stored will last 3-5 years, if you plan to use the food before that then yeah this kind of emergency kit is overpriced.

I don't know about that one. I know of some pretty hardcore preppers who have the goods to put a serious dent in your plan. They know that they have targets on their backs and have even prepped for it. So best of luck with your plan.

Brown rice is bad for prepping. It has an oily outer layer that spoils. White rice is the way to go for emergency stock.

White rice lasts longer than brown rice, but brown still lasts a decent amount of time. While white rice will last several years if not decades, I've eaten brown rice that was at least a year old (and kept in an unsealed bag) and it still tasted fine. If you keep it dry and sealed, it should last a decent amount of time (eg. Over a year). Another strategy is just to rotate your dry foods so you eat your older bags of rice and beans.

Peak refuel are the only brand of freeze dried meals I've found with a good protein selection. I have a 30 day supply I bought from them, pricey but worth it if it's ever needed.
