Yes but the question is how massive would be the changes on the new model. For someone like me that don't need all processing power of M2 buying this one makes sense.

Exactly, only a very small, targeted slither of iPad Pro users are probably using the full processing capabilities of the M1 in a tablet form-factor. iPadOS is the true limiting factor.
