A handful of the 41mm cases are on sale at $350 as well. Not all of them, but the M/L Silver Aluminum is, but the S/M is still $399 so you'll need to hunt around.

Firstly, to each their own - if you want the 8 because it is new and have a few more features, do it. It is like getting an iPhone 13 instead of a 12. The 8 will be supported for a year longer than than the 7. So is it worth $100 to know it will last a year longer and has a few more features? I think so. But not all will.

As far as price, I have seen several 7's on sale for $279/249 for the two sizes. If you are looking for that, there will be black friday sales on the 7 that may even beat this price.

Even I got the series 7 45 mm for $270 from recent SD. Walmart did a price match with Staple/Staple connect for delivery when chatted online. I know it didn't work for all but most ppl tried multiple ways to get it matched with Bestbuy and Walmart.
