Realize that these are made to be very light and long battery life. It will throttle the processor due to the constraints of the thin design. You will never run the i7 at its full capacity. It is limited by power delivery and the cooling is very limited. The i5 version actually benchmarks faster speeds. You can improve the cooling a little by removing some of the tape covering the pinholes on the back and you can also repaste the processor with better paste and add some thermal pad to the heat pipe to transfer more heat to the bottom of the computer. That will reduce the throttling if you have that issue.
There is only one fan in there and integrated graphics. There is a new version that came out that has dedicated graphics card, two heat pipes and two fans and a 90AH battery instead of 80AH. 32GB and 2 TB drive for $2200 if you can find it in stock. That was what I "wanted" but could not justify additional $700 for basically a second fan as I don't "need" the dedicated graphics.
So, You are complaining about $400 for an additional 16 GB RAM and I'm complaining about $1100 more for additional 16 GB RAM and a second fan.

I usually buy a desktop replacement 17 inch and a 14" light laptop for travel. I had to replace the 14 and found that the LG16 was lighter, thinner and overall smaller than my 14 so I got it and I love it. It was 16:10 aspect so I liked that as well to the degree that I stopped using the 6.5lbs 17" I had and just started using the LG as my daily. Only issue was running out of RAM with all the apps and tabs I have open so I am replacing the 16 with the 17" LG with 32 GB RAM.
