You can buy Xbox gift cards, which are not excluded and triggered the offer. The Xbox gift card can be used to purchase physical items at the Microsoft store with no expiration date (that's what I found out from the thread).

The Dell gift cards are excluded.

It seems you can do a certified refurbished Xbox Series X which doesn't need a bundle. That's $469.

And w/ Dell, it's ok if Tax takes you above the threshold. Here in MD w/ 6% tax, I priced it out and I was at $498 so I'd need a small filler.

Let's see how much I like this Series S I got on the target deal. Maybe I'd wanna upgrade.

Otherwise, I've always been curious about a surface pro, especially as an entry computer for my 9-year-old.

What's there to buy other than an xbox? A Samsung Galaxy watch perhaps? Not sure buying a Galaxy Watch 4 when 5 is out is a good idea.
