For what it's worth I have this very model(MB Air M1/8GB/256GB) and see zero reason to update. This is an awesome little laptop and if I was starting with no laptop, I'd pick this over the M2 version on price alone. This is all of course providing that needs are minimal. I've bumped into running out of space a few times and have seen a hit on performance a couple times due to low memory but those are issues I'm ok with for the price.

My opinion is that smartphones with large storage sizes, i.e. 256GB and/or greater, is often a waste for most people that pay the premium. If you're without WiFi for long stretches of time, running a business, or are just lousy at remembering to clean up old pictures, videos, etc. then I see the logic in getting an iPhone with 256GB (or larger) of storage. Otherwise, I usually think most people buy those large storage iPhones just to brag. But that's just me.
Doesn't look like it for the holidays

ETA: My much bigger concern is the 8GB memory, not Thunderbolt 3 attached speeds.
