Anyway...The LP3 is a better turntable in basically every way, but that's really because it's upgradeable. It's got a replaceable headshell and cartridge and an adjustable counterweight so you can change those out. With the LP60s, you're married to the cartridge it comes with, and will only be able to use the needles designed to fit that. However, that's not necessarily a bad thing for somebody new. The AT3600L that the LP60s come with is a perfectly fine needle, it's easy to change out, and you can find replacements basically anywhere.
Yes, if you want to listen to the LP60 or the LP3 via headphones you will need an amplifier of some sort, either a speaker amp with a headphone jack or a smaller headphone amp. If you go for the bluetooth turntable, you can pair bluetooth headphones directly. If you want to use headphones, just search Amazon for a headphone amplifier and find something with an Analog input.
Any of these three turntables are perfectly fine for a beginner. If you're planning on getting in and staying in for a while, I would go with the LP3, just because it's a nicer table, but if you only want to dip your toe in, either of the LP60s is a great starter table.
