Apple 5k and retina screens are 200-220ppi.
1440p @ 27" = 108ppi = looks like every crappy low res monitor from the last 20 years.
4k @ 27" = 160 = 160ppi = not as good as full retina, but looks WAY better than 90-110 ppi range.
It's not worth trying to save $50 here or something to drop down to 1440p.

I see the $280 still and looks like Amazon is selling a used one for $210. Pretty solid deal. I'd pull the trigger on that if I needed another monitor.
Also.. Her work is providing the laptop so I have no control over the number of outputs. As long as I have 1 hdmi, 1 vga, and 1 USB-C.... I should be able to have 3 independent screens?

The difference between the two is bandwidth and price, with thunderbolt being more expensive and allowing to run the monitors at higher resolution and refresh rate. Don't buy the monitors until you have chosen the docking station, as it doesn't make sense to buy 4k monitors if your dock can run them only at 1080p or 1440p. Make sure the docking station has at least 3 video outputs.
As long as your computer can drive it at 60hz, I wouldn't go below 4k as a primary display for office work (or things like casual photo editing, etc) on a 27" monitor these days (unless you're using 2 side-by-side; dual 4k is probably excessive).
Big plus is the integrated USB-C PD and USB hub, so it's a one-cable situation with my MBP (and I use HDMI to my desktop for non-WFH usage). The only way it could be better is if it had a second USB upstream port so I could use it as a KVM too, but I can't really complain. The USB hub is limited below full USB 3 speeds if you drive at 4k60 (limitation of USB C bandwidth) but the display has a good HUD to select the bandwidth priority mode - you can choose to limit to 4k30 in order to get more USB bandwidth for peripherals if you want.

ports are highly dependent on what they laptop capabilities are, i.e. USB-C won't always do video... it's hard to tell without any specifics.
