I haven't had any of my watches or phones for that matter get scratched in years. The Fenix bezel is the weak spot here, if cosmetics is important to you. Bushwhacking, bouldering, scrambles over trails haven't done a thing to the gorilla glass. Probably had well over 1000 hiking/backcountry miles on my last Fenix, bezel was worn but the glass was fine.
If I didn't go into the backcountry, I think i'd be more that happy with a Forerunner. Yes, running three times a week w/ the Fenix is not comfortable with an ill fitting watch band. I switched to the Ultrafit style velcro nylon band, that helps quite a bit.
That said, tempered glass protectors can be had 3/$10 and work perfectly well. Save the $50 and put that towards the watch bands that you'll probably need. Also maybe a dozen of those silicon charging port covers while you're at it.

To me the touch screen on 7 is worth the upgrade
I also have a forerunner and i know what you mean, but as long as i tighten the strap on the fenix 6 I'm fine

I'd go with the Sapphire. With its thickness, you will bump it very often. With Sapphire you don't have to worry about scratching the surface and be more carefree. Adding a screen protector is an option, but I don't like dust collecting around the bezel.
