The Wusthof blade gets sharper and holds its edge for longer. Interestingly, the Wusthof was also much cheaper than Zwilling.
At this price point, I would look at Misen (probably similar steel to Wusthof) or Tojiro- much harder steel (look on Amazon or Hocho-Knife).
If you want something cheaper then try Dongsun on AliExpress (similar hardness to Tojiro) - avoid most of the others on AliExpress

I already have two 8"chef knives, one Wusthof/one Zwilling and I'm still contemplating this!
Eventually added a 10" carbon steel chef's knife for super sharpness as well as handling larger jobs, and a larger cheap mercer bread knife for the same reason.
Santokus are really nice, but I doubt I'd complain if the chefs knife I had were quality like this one.
Stinks that santokus only really come in shorter overall lengths. I do really like the carbon steel blade edge, too though.
