Better off with cast iron on the stove, better quesadilla and use for other cooking
I usually use stainless but completely agree. If you have a skillet of almost any construction a pan fried quesadilla is easy and fantastic. Medium heat, enough olive oil to wet the base and a bit of the walls, drop it in and flip when the bottom is getting golden brown. I literally had one for lunch today, easy and delicious with no extra appliances needed.

Yes. But it it also a handy weapon in an emergency? 😁 A cast iron skillet: equally great for stovetop or campfire cooking/frying/sauteing + best pancakes ever & is nearly indestructible, but is great for self defense in a pinch!
