Better food texture, mutiple items at a time, you cook anything on this that you can on cast iron skillets. This plastic appliance wont last as long as cast iron for that extra $5....

The cast iron can be used with any heat source, so sure
I usually use stainless but completely agree. If you have a skillet of almost any construction a pan fried quesadilla is easy and fantastic. Medium heat, enough olive oil to wet the base and a bit of the walls, drop it in and flip when the bottom is getting golden brown. I literally had one for lunch today, easy and delicious with no extra appliances needed.
