If you're after something authentic, then this is not it, this is definitely American food, influenced by Chinese dishes, similar to American Italian food, or any other American immigrant style food. Those "family" Chinese restaurants are also rarely authentic too, since they have to cater mostly to customers who do not come from mainland China.
Plus, authentic Chinese food may not be what you actually want anyway. I've accumulated about a years time in China, the food would take getting used to, and would be unlikely to do well outside of a China town in the US, especially with the amount of bones and cartilage you will find in many of the meat/fish dishes. Which is exactly why we have the Chinese-American food we have today.
If you accept Panda Express for what it is, i.e. it's not authentic mainland Chinese food, I think it's great food, that is pretty healthy if you order correctly, and with this coupon pretty affordable for fast food.

on the email it says "check back next week for a new scratcher and even more good fortune"...would there be an even bigger discount next week?

2k calories is daily calories on average
I am on a bulk so eat 2.5k-3k calories.
This seems just enough for 1 person a day Let alone what people are saying 3-4 people?

Where can we find that its 1960 calories? is that per entrees. or if one selects all 3 entrees boxes for orange chicken does it total up to 1960?

The 3 large plates you can have a much greater variety of dishes though for roughly the same price.

Any chinese take out place makes food (fresh to order) in quickly, typically 10 minutes or less. And you get a lot more food for your money.
Where I live (near Tampa, FL)
Value...
Panda Express is $35 for 3 entrees and 2 large sides. Premium entrees cost more.
For $35 at my preferred Chinese take out joint...
Lunch Menu:
five lunch specials at $6.95 each
Lunch menu entrees come with rice (pork fried, white, or brown) and a soda or egg roll.
Lunch menu entrees are larger than Panda Express entrees.
I save $0.25 and get a crap load more.
Dinner Menu:
( lo mein at $5.35 to $5.65 (small, pint) or $8.35 to $8.65 (large, quart)
or
Chow Mei Fun for 9.85 (only large)
) and
( two entrees (comes with white or brown rice) at $8.35 to $13.95. Of course $13.95 is for seafood.
or
two combination platters (comes with fried rice and egg roll) at $8.35 to $10.95.
)
Quantity...
Panda Express boxes:
Small carton is 8 oz capacity
Medium carton is 16 oz capacity
Large carton is 26 oz capacity <-- sneaky bastards
Have you ever seen how they fill the boxes, they leave an inch at the top. So to they do not fill the boxes, shorting you.
Real Chinese take out:
1 pint is 16 oz.
1 qt is 32 oz.
The place I go fills them to the max. Why do you think they put a piece of cardboard at the bottom of the bag? To soak up the spill over.
Quality...
Do you ever watch someone making dumplings, wontons and egg rolls Panda Express. Wait, they only have egg rolls. And to answer that, you won't. Everything at Panda Express is shipped to them. They might stir fry some prepackaged stuff and put it in a bin to scoop out. Sorry, Panda Express is like the McDonald's of Chinese food.
I often cook my own Chinese, Thai, Korean food (and I am a white guy, the wife is Asian). It is easy to do. Ingredients are an investment, but will last a while. My wife says I cook better than her. And at a fraction of the price of take out. I cook in large batches and portion out meals in foodsaver bags. Even reheated from the freezer tastes better than anything from Panda Express.
Note: I just follow a lot of recipes from Flo Lum (look for her on youtube) and tweak them a bit. I am not affiliated with her in any way. Just saying she teaches out to make great Asian dishes.
FYI... If picking up from my preferred Chinese restaurant, I pass by 7 other Chinese restaurants on my direct route. Two of which are Panda Express. With slight deviations from the direct route, there are dozens of choices.
Shout out to China 1 @ 3841 US-301 Riverview FL. Best Chinese food I have found in my area. Reminds me of Americanized Chinese food from Northern and Centeral NJ.
