You'll definitely get better CPU performance but will be stuck with Intel Iris Xe 96EU graphics which is significantly slower than the RDNA 2 based Raseon 680M graphics. On top of that, in this one, you can add an external GPU using the USB4 port whereas the other model you've referred, doesn't even have a USB4/Thunderbolt 4 port. Check the detailed specification. So, there is no normal way of adding any thunderbolt accessories or external GPU unless you want to go with some DIY methods of using M.2 to PCIe X16 converter, separate PSU to power the GPU and loosing the capability of using any PCIe SSD.

But Microsoft has repeatedly said if you bypass and a check is performed no updates will be able to be installed. I wouldn't trust the process at this point if your machine is not "eligible".
