I've worked at a few soup kitchen type places that serve 500+ meals a day, and I gotta say they use like $20 knives. Even the head chef doesn't use $100 knives, it doesn't make sense. They sharpen them weekly and hone after washing.

You can get these basically for the cost of getting them to your door. They are surprisingly popular in food service.
