Not the case for higher-priced Apple devices. Since they basically never go on sale and maintain a large fan base, the resell values drop dramatically slower than comparable Windows/Android devices. Most of these devices are never resold and typically used until Apple drops Mac OS support for the hardware, the deprecation is almost irrelevant.
I wish this was an M2 model, so I can use it for Video editing. Using M1 with 8GB Ram now and I feel a lack of Ram sometimes.

Even Dell, with their XPS line, equips even the cheapest configurations with 512GB minimum. SSD prices are at historic lows, and yet Apple price-gouges customers for an upgrade from a too-low base size.

Ever notice how Apple NEVER changes prices of upgrades when market prices lower dramatically? NEVER. The upgrade prices are fixed for the entire life of the model.

I'm looking to get myself a MacBook. My main purpose will be using Lightroom and Photoshop. How good is this Air for that with the bumped RAM? Or is the Pro the way to go?

Should be fine I have a mbp similar specs the processor not really slammed however the screen on the air nowhere near as good as the mbp so you either get a great external monitor or upgrade to mbp with a much more color accurate and depth. I assume you calibrate your displays? In any case for photo or video apps the pro preferred for color depth and accuracy.

I use external monitor so it doesn't really matter to me.

Appreciate the input! I've heard the pro has a better screen but didn't realize it was that different. Probably better for longevity to get a pro as well.

Check out the m1pro. I bought the 14. Paid $1600 but man that is a nice laptop. I have seen open box around $1400 and the processor 2x more powerful on creative. also that version only supports one external monitor which blows chunks IMHO. I need three for my workflow so I update to the new Mac mini but I got a long with the mbp and displaylink for a year. I couldn't deal with the compression.
