Just a heads up, the harbor frieght panels have been out performing most panels on the market. Its well documented on youtube. I did not compare these.
Now you're just trolling. Covering every last detail would be way too much information to post here. Should I have suggested a wire gauge to use without knowing specifics, too?
There are tons of resources for DIY solar setups for people to study in order to determine what they need for their use case.
This kind of hostility to productive/helpful posts has a chilling effect and makes people not want to help here.

Vague question this is - but, if one is self employed as I am, I guarantee that I can write off many of these panels given my occupation.
Remote monitoring, battery maintaining, security cameras, and on and on.
And then I can write off all the battery systems, wiring, switches, etc. Cameras, internet, etc.
Now personal home use? Then its as you said. And then some.

If it's a controlled access gate, use a panel, battery system, along with a camera and alarm.
Stick it on a boat or off-road side-by-side and they can help ensure your battery stays topped off, and paired with a battery/inverter, you could have 120V power with you wherever you are with that vehicle. Charge your phones/laptops, powertools, run a fridge, induction cooktop, circular saw, winch, lights, etc.
To expand on your thoughts - these can be used in any off grid situation where you need electricity and don't have it.
Car ports, security cameras, storage sheds, storage units, gate monitors, battery minders, security lights, camping lights, 12v refrigerators. The lists are endless depending on your needs.
180 watts out of one panel is much more dense energy production than 140 out of two, and that is much more important than cost for the most common applications for these (motor homes, vans, boats) which typically have limited usable space. I bought two 100 watt panels for $130 around Black Friday, I'd much rather have two 180watt panels for my boat, even if it cost 2-3x as much.
Van life and motor homes require very sturdy and efficient panels since they are usually fixed to their location. This addresses your 180w thought. You get what you pay for.
Why could you not get the HF cheapos, wire them in parallel, build some brackets to hang them along the sides of the boat during the day and get maybe 2 more batteries and led lights for night fishing?
After they are no longer charging the batteries, fold / pack them up out of the way and be on with your business.
This is assuming that you are not under much of any speed. I'm sure that harmonic vibration and just pure wind velocity would negate being able to use solar panels without damaging or ruining them.
Can anyone recommend the best panel for an adventure van build? Ty!

Even the solar generator videos address solar panels.
I will say, you get what you pay for. If you mount your panels on the roof, buy the best you can afford that has the best warranty. Also, do not get cheap on the wiring and switches and relays, etc. Your life, and anyone who is in the van with you is at risk if you opt to go cheap.
These types of electrical fires are difficult to extinguish. Your van and batteries and belongings will burn for quite some time.

These solar panels don't output the 5V a Ring Doorbell needs.
You'd need a solar charge controller and wire the 5V from that to the Ring Doorbell.

For comparison, the Ring Solar panel is rated for 2.4W.
You are lucky wiring two 5V in series didn't kill your Ring Doorbel since the solar panel for it outputs 5V. What you should have done is wire them in parallel.

Look up Wasserstein for Ring on Amazon. It's an aftermarket solar panel made for Ring. I have one for a Blink camera, and it works well.

The best is what will work best with your solar generator and what will fit best on your vans roof. BougeRV has some great hardware for rooftop panels that will tilt up to get better sun.
