Nope, likelihood of a problem increases, I'd want at least $200 off personally.
I would rather buy new at Costco if that is an option. Costco provides 2 year warranty for all laptops sold. I checked it out at the store and its crazy light for sure.
This same laptop is currently $699 new at Costco, correct?

Worth taking a chance on the refurb to save $100...?

No, unfortunately. The LPDDR4 is soldered to the main board. You can upgrade the storage drive or add a second M.2 SSD.

With NVMe storage the need for copious amounts of ram is negated. In my desktop I use a 5900x/64GB 3200mhz/6650xt for gaming, photo and multimedia processing.

The Zenbook 14 with a Ryzen 5500u, 8GB 4266mhz and MX 450 2GB performs those same tasks very well. It's never stumbling when it gets near maxed out.

Agree NVMe was a big leap forward in terms of storage-backed virtual memory performance but it's still several orders of magnitude slower than RAM.

I built amd 3700x, 16gb 3600 ram, i think strix 480 8gb gaming graphics, pci3 drive. 1080 2k 4k simple video editing is very slow.
