The two flours are not the same. The reason people stick with Gold Medal or King Arthur is the very predictable consistency, which matters more for pastry and bread than general use.

In the USA its Bromated unless it expressly says Unbromated.

Q – What is bromated flour?

Besides bleaching the flour another process is called bromating. Bromated flour is a flour that has been treated with potassium bromate to improve the doughs elasticity and produce a higher rise. Nearly all the flour in your supermarket has been bromated. Commercial bakers use it for it's dependable rise. Home bakers use it for the same reasons. The substance, in theory, is supposed to bake out as it cooks, but if any remains behind it can be very harmful.

Bromate has been banned in most developed countries since 1994, including the UK and Canada! In addition, in 1991, California declared bromate a carcinogen under the state's Proposition 65. Baked goods sold in California would have to bear a store level cancer warning if they contained more than a certain level of bromate. As a result, most California bakers have switched to bromate-free process. In the US bromated flour is legal, however labeling is NOT required, although some states may require flour producers to label the flour if it has been bromated.

Thank you for pointing this out. I'm switching to King Arthur. From their Website:

"Flour sold by the King Arthur Flour company has never contained bromate for all of the reasons listed above. If you are a baker who has never used bromated flour then you have nothing to worry about. If you are a baker currently using bromated flours and would like to switch you will have to make some slight adjustments to your mixing process, but in our view the effort is worth it as you will be able to provide your employees a safer working environment, and your customers with a healthier product."

no wally's world in nyc. the 5lb store brand flour usually goes for $4 on sale at holiday time and gold medal brand goes on sale for $5, so yes, this is an awesome price. sadly, i'm on long term low carb, so cant have any. back in the day, i used to buy auguson farms wheat berries to grind my own flour. it was $16 for 25lb bucket. now its at a complete ripoff price of $44. $4.82 for 10 pounds is a bargain.

If you want unbromated from Gold Medal go for the yellow bag of bread flour. It's unbleached and unbromated and only slightly more expensive than this. https://www.amazon.com/Gold-Medal...000SSW200/
