Edit: I went to one directly mentioned in the OP and when you get to the step after confirming your room type there is an upgrade/add-ons selection that had some options with free airfare. So it is YMMV on which cruises they are offering it on. The few Bahamas ones I looked at did not have it but the first Alaska one listed in OP did

They normally remove the airfare "deal" once it is 90-120 days prior to sailing. In some cases the "BOGO" airfare is more expensive than buying on your own - for example, I was quoted $698 (for the 2 airfares) in 2024 for BWI-TPA (and who knows what they will pick for you) and with minimal effort one can normally get this for under $300 on Southwest direct AND choose your own flights.
The "free" excursions aren't free but a discount on ship based excursions (which are typically on buses on not as good as independent excursions).
The "unlimited open bar" comes with significant service charges that add to your bill (you will see this on the last page).
So this stuff is not "free" but you are just buying a bundled product where you see a final price and then have the nice feature of having to pay very little while on your actual vacation.
Anyhow, NCL is great but do your due diligence.

I tried looking into the T&C on this, as the "free airfare" line has a ^ by it, and it says:
FREE AIRFARE^
Buy our airfare for one guest, and the second guest flies FREE. Offer includes roundtrip flights to and from where this cruise departs. Airfare is refundable under our risk-free cancellation policies.
I think 3rd and 4th guests pay a higher fare, I recall seeing somewhere.
The point of my post was all the "free" verbiage is designed to make you *automatically* think the deal is a steal and jump on it. Many of the cruises are short notice (next few months), so it could very well be that they have these offers just to fill spots, or it could be just a marketing ploy.
As for me, I literally got off a cruise last Sunday, so that's what caught my eye about this deal, even though I need a cruise break. That cruise was chosen for dates (coincides with spring break) and for itinerary (we've been on a few cruises in the past and we wanted to go to places we've never been before, which at this point is tough, there are only so many caribbean destinations afterall). As for where I booked it - it seemed RCL and various travel agents all had similar or the same pricing, so I wound up choosing Costco Travel because I'd get 5% back (2% executive and 3% CC on travel) PLUS Costco was offering $140 shopcard per room (I booked 3 rooms, one of them was for the inlaws so I booked it but didn't really pay for it). After all was said and done, those discounts amount to around $800 which was about 15% "discount" of the cruise fare if you think about it that way, and Costco ShopCards are as good as cash for me.
We did take a few excursions, but those were booked ahead of time. We're not big drinkers, we don't eat at the paid restaurants onboard, so onboard credits aren't super useful for us, I'd rather have a cheaper fare upfront. For airfare I booked our own, and just planned on getting to the port (San Juan) a couple days ahead of time to reduce the chance of there being a travel mishap.
The only small risk of NOT booking direct is that if you get a bad agent that doesn't answer the phone or respond to emails is that if you want to change something you have to go through your agent in most cases (if you call the cruise line directly, they may tell you to call your agent).
If you are new to cruising, you should also know that almost all cruise lines charge you a Daily Service Charge (Gratuity) of about $20 per person/ per day. This can really add up for a family of 4 on a 10-day cruise but the plus is you don't have to walk around the whole cruise with a wad of cash to tip people, it is all paid for. This is part of the concept of these packages is that once you show up, you put your wallet in the safe and relax because you have paid for everything already.

The other wrinkle with booking 3rd party, at least with RCL, is that if you book through an agent, some types of changes need to be pushed through the agent vs. calling direct. Just makes it tough having a 3rd party to drag into it. Long story short, I booked 3 rooms and wanted to change the dining time as well as make sure we all had one big table. RCL should be able to do all of that but insisted that the "travel agent" needed to request a change in the dining time. At the end of the day it was just an additional hassle.

They emailed me the shopcards toward the end of the cruise which was nice I didn't have to chase them about it.
As for the wait, I guess it depends. Because we had my inlaws, they kind of dragged their feet to make a decision to go so we wound up booking the day after Thanksgiving and Costco Travel's system was trashed. I think I waited on hold on the phone for over an hour to verify the 3 reservations (I had to make 3 separate reservations because their website was swamped). When I finally got ahold of someone they said that it was a very busy day (makes sense). I wound up having to call them once or twice after that, just random days of the week, and didn't have an issue getting someone in a timely manner and they were very pleasant over the phone.
Booking direct would have been WAY easier, but I don't think I'd sacrifice an ~ 15-20% discount simply to avoid a 3rd party in the mix.
