mine is an hp and I was able to put 64gb of ram to use for transcoding.

This would absolutely work for Home Assistant but, in truth, it's overkill.
I would say this is better suited for running a hypervisor (proxmox) and multiple virtualized servers. You could run home assistant as a VM and a half dozen other servers of your choosing.
