I recommend Hardware Unboxed on YT (Techspot is their website) or Techpowerup as some of the top hardware reviewers as they have extremely detailed reviews, especially for GPUs. Hardware Unboxed did a recent updated test of the RTX 3070 vs RX 6800 (16gb) since they're similarly priced in the US: https://www.youtube.com/watch?v=Rh7kFgHe21k [youtube.com]
HW Unboxed and others have made it clear, major 2023 releases are often using more than 8gb of VRAM when maxed out at 1080p and even more frequently at 1440p. For someone buying a gaming GPU this year, I don't recommend the RTX 3060 Ti, RTX 3070/Ti to anyone unless heavily discounted since we have options like this 12gb RX 6750 XT at only $310. This isn't too surprising of a result but worth noting since the RTX 3070 generally beat the RX 6750 XT just slightly when both were reviewed (with older games at the time). Now that games targeted for the PS5 are rolling out in mass, 8gb of VRAM can be quite limiting moving forward.
Fwiw, I also benchmarked an RTX 3060 Ti and RX 5700 XT recently on 1080p ultrawide on recent games. I could only run Diablo 4 at medium without running out of VRAM, stuttering etc in many parts of the game.
You should consider a better GPU to wait for, after all the waiting you're dedicating to this revolutionary upgrade of 14 months.
You are way better at controlling your spending than I am. Kudos to you for being so well-disciplined!

Prices on PSU's currently…wow.
Just did a build recently for the kid minus everything but the video card. Was initially planning to hold out for the 4070 to go on sale i had access to, and even while not being so hot on it as a good long term value buy. But the kid plays at 1080p and mixes in a lot of older titles. Making this at almost literally half the out of pocket cost price too tempting a better value buy to pass up.
The $300 extra saved can go into the "feel less bad" splurge fund a few years down the road the next time i'm shopping around on video cards lol
