According to a dictionary a Sous Vide is a method of cooking food, especially meat or fish, by vacuum-sealing and immersing in warm water. In other word, cooking under a controlled low temperature environment. Anyone who owns a crockpot and / or a slow cooker can turn it into a temperature controlled dehydrator (to dehydrate fruits, vegies, and even meat), incubator (to ferment yogurt, Koji Rice, Tempeh, etc.), Sous Vide, etc., with a very inexpensive digital temperature controller (DTC) -- Alton Brown [altonbrown.com] who prefers multi-purposes kitchen gadgets will probably approve this. Depends on the model and where you acquire it, a DTC, i.e. W3230, etc., can be had for as low as US $1.99 + Free S/H to any US cities from AliExpress (about 2 weeks shipping time). This means it is DIY project to provide a plug and an outlet to the DTC for a cooking apparatus to connect. Then, just connect the cooking vessel to the outlet of a digital temperature controller and insert is temperature sensor into the cooking chamber and presto you have a very inexpensive dehydrator, incubator, Sous Vide (to cook your vacuum sealed meat), etc., system!
