Modern engines lean towards meeting CAFE standards and use thinner and thinner oil to achieve that. Oil selection used to be wholly based on the engine itself, now it is based on what is good enough for the engine but based on overall efficiency and most MPG for the vehicle as a whole, basically, what is the thinnest oil we can possibly use and still get decent protection. Thinner oil is more efficient. Higher compression itself has nothing to do with needing thinner oil. Higher compression trend is also for increased efficiency. I would still use what your car manual suggests.

I've got cars that need 0W-20 and 5W-20. They are old cars.. 200k+ miles each. Will using 10W-30 in these cars be OK?

Most small engines list 10w-30 as acceptable, Honda , Kohler as well as Brigss and Stratton.
You can use SAE 30 or 10w-30. Very few cars left on the road run 10w-30 anymore but I buy these deals for my small engines.​

Not an oil expert but I wouldn't use 10W-30 on a car that specifies 0W-20, I'd be ok with using 10W on a car that specifies 5W-20.

My Subaru specifies 0W-20 but the manual says 5W-30 ok if 0W is not available.
