i personally love their mayan organic medium and stock up when they sale at around $16 per kilo i consider it a better coffee bean than lavazza. the dark seems like a new to costco product that sounds good. i doubt you'll find such an overstock 3 day sale in local stores. this sale runs thru sunday 05/14.

Why do people talk out of their ass?!
So now I can make a light roast, medium roast, or dark roast any time I want. Green coffee beans are cheaper too. Just some words of wisdom for anyone who runs into those scenarios. So why drink coffee if not for the caffeine? check all of the studies being done on coffee. very high in antioxidents. Studies are showing that coffee is very good for the liver. Helps lower risk of liver issues. caffeine on the other hand is quite destructive.
Our Costco has that plus options from the largest roster in our city. Not just the Starbucks blends.

The higher the temp ,the more you have to keep your eye on the air fryer. The beans will go through different stages. "1st crack" is when you hear the beans start to make a popping noise. If the cracking happens at the lower temp you can let it go past that point a couple minutes and you'll have a light roast. You wait for most of the beans to make a popping noise. You can also look at the beans to get an idea of where they are in the stage too. You'll most likely be at the light roast stage once the 350 degree point is finished. When you ramp it up to 380 degrees things move quickly. You'll get to medium roast/dark roast fast. You need to move the beans around. At dark roast the beans will expand quite a bit and get a dark color to them. The beans I've been roasting, the "2nd crack" is hard to hear. 1st crack is easy to locate. So at the point of ramping it up to 380 I simply look at the beans color and size to get an idea of where medium/dark roast is. To be honest, I've been liking light roasts recently. So i've been targeting that stage. But I did do a dark roast too recently. I nailed the light roast on my first attempt, understood how things should operate, then did the darker roast on my 2nd attempt. Both worked! You won't get a perfectly uniform roast, but it will be a great cup of coffee I promise! Let your beans degas for a couple days (I put the beans in retail coffee bag with a valve on it, basically I just reuse a coffee bag I've finished off from before) before drinking. You don't roast the beans then instantly make a cup of coffee.
Also after you roast the beans you need to find a way to cool them off quickly. You can either use a fan on the beans. I take a metal bowl, put the beans in that bowl, then take a larger bowl and fill that bowl with cold water. The bowl with the beans floats on top of the bowl with the cold water in it. Transferring its heat to the cold water. You can also put your beans in a zip lock bag that you trust, and submerged the beans in a bowl with cold water. Put a weight over the zip lock bag to prevent the bag from floating to the top. That did the trick too. That probably transferred the heat faster.
If you try it, good luck! I like doing this method. Gives me another reason to use my air fryer too! I have found that green coffee beans are much cheaper if you can get a good source. Ebay is a good option!
Every air fryer is different. The Ninja air fryer I use is large. So the heating element is further away then a more compact air fryer would be. Of course, the closer something is to a heating element, the faster it will cook. So you'll have to modify based on what you have.
