I snagged one of these for $239 during their last sale and I love it.

Don't buy a preloaded usb. There's tons of instruction in creating your own including YouTube videos. Don't be lazy. Search for onesauce or there a vertical version for ALP games.
Yes, it does. After adding Coinops to USB, you just plug it in usb slot to play retro games. Good video on this at Wagners Tech Talk and Pdubs. You can play coinops without control panel but it's a pain.
So I'm not looking to play video games on it, just purely pinball
Is there a premade toolkit that uses USB like the ALU or is it a totally different process to get pinball games fully working on the unit?
It comes with games and you can buy and add from AtGames. You can watch YT video of game play and rating before you buy. They have good sales a few times a year during Owners Days.
Pretty sure they're still going to sell these. It's likely the new model's price point will be $1,000. Seeing that all companies have gradually increased the price of the machines. But the good news is that they have an upgrade kit for these if you want to make it a 4K and that is expected to run around $350.
That being said it's possible Atgames just uses this shell with the 4K board in the upcoming 4K release… which means this would ultimately be a cost saving setup for you. I'm buying one because $400 is a steal!

The joystick is definitely very retro and the six buttons are quite usable… Just wait for the controller to go on sale and it will cost something like $110 plus $15 shipping… It seems like a lot but it is worth it, mainly, because without it, you don't get the flexibility of adding a lot more retro games while still keeping that old-school feeling… Attaching a USB joystick just kind of makes it feel like you should be on a PS/xbox/etc instead.
And do a little research on adding what's called whopper with sauce, or pinball pop-up, something or other… A little bit of Google search and you'll find so much stuff to add to this you will be amazed.
On the other hand, if you're really into video pinball, then you probably want to wait for the 4K version to get released and to go on sale… Mainly because upgrading this unit to 4K is going to be basically tossing everything but the cabinet out… Or getting the measly amount that atgames is willing to pay you for the old board, which is definitely not much.
The restock thing can happen over and over again over the next one or two weeks, depending on how many they had in stock… So just keep checking back.
Good luck!
You feel the plunger going off, you can feel the ball rolling on the table, hitting a bumper has a real feel. Push on the cab when the ball is rolling will move the ball but, if you go to far, you tilt it. You would be shocked on how close these can get to the real experience.
Real size, real glass over the monitor, impressive results...
I was following someone on YouTube who built one step by step, using the best parts he can find, and it was around $1,500 but, ever detail was there...

I was thinking about this one myself as it's a good price and all in box vs building one but, I will wait to see how the 4K one is...
