It should, but be aware if you're MS account is not managed by Amazon now, it will be after using this. If you're fine with using Amazon to manage your subscription, then it should extend it. It often takes 5-10 minutes to fully show in your Amazon subscription settings.

Mine is managed via Amazon and I just did it and it showed two separate for about 10 minutes, but it just switched and extended by 15 months.

How hard is it to undo that? Should there be another low price deal through online resellers, that we might want to use to further extend it later with.

In the past I waited until a day or so before it expired and then cancelled it to redeem a subscription code that I ordered via mail. Not sure how other digital subscriptions would work from other places with the Amazon one active.

Not possible to undo that before the subscription ends other than just cancelling. You're stuck with Amazon managing it until it runs out.

What issues would I have for it to be managed? I currently get my o365 at a discount through work for $70/yr

None that I've found. Got a good deal years ago via Amazon (around $40 per year for family) so stacked them to get the 5 years (which I believe is max). I just occasionally increased as I see a good deal. This is really $50 for 15 months (the $70-$20 gift card and you get 3 extra months). So it's really $40 for $12 months. Plus they stack, as I just bought two to add to my almost year left.

ETA: Biggest issue is you can't really take advantage of deals from other sites as sometimes Newegg and others have similar good deals.

I can confirm that it took about 10 mins to extend my existing subscription.

After that I was able to cancel on Amazon on "end date" and at that point I can just re-subscribe at Microsoft.
