$119 for new may not be the lowest price ever but it's still a slick deal imo. I sent a Pro 6 qt as gift two weeks ago. "Used like new in original packaging" Amazon Warehouse $83. No mention of any damage including to the packaging. It arrived good as new never used.
Having tried every prior model I would only replace our evo model with another evo which would be Pro. It's that much better. If you would not buy a 10 year old smart phone to save a few bucks then you should think twice before buying any Instant Pot which lacks the refinements of evo.
Our 3 year old Duo Evo, which is essentially a silver Pro, has seen 3 years of daily use with no error codes or failures.
Precise digital temperature control lets you start a chicken with a 10 minute p.c. then switch to slow cook to get a tender moist result avoiding over-cooking while you attend to other matters. It also allows for proofing of dough and fermentation. The inner pot is a real stock pot with insulated handles which eliminates burns and spills. It allows starting on the stove or portable induction hot plate to speed time to pressure considerably especially with soup or chili. This saves wear and tear on the heating element and it is a better way to saute or brown while also being cleaner.
Whatever model you buy be sure to experiment with the covered pot-in-pot method which allows cooking things in their own juices which are conserved for added enjoyment.
Pro Plus adds the features of MAX. Touch controls, 15 p.s.i. option, programmable automatic steam release and more but I haven't found these to be essential.
