Even so, nothing magic about the soil in Italy. Similar latitude as the US. If Italy is so great, why did so many of them move to the US?

I am currently drowning in tomatoes from the garden, doing passata in batches whenever I get a chance. Of course this is when the canned tomatoes go on sale, when I can't even consider buying them. With my luck, next month fancy cucumber pickles will go on sale. Meanwhile, pickling cucs are getting nice on the vine.

I'd be curious to know how much of the can is sauce vs tomato. Apparently there is some kind of import duty classification that leads cans of Italian tomatoes to be a lot of sauce. Walmart sells Cento San Marzano tomatoes (the real kind) for something like $5 a can. But I end up straining the contents to thicken it up a bit more.

I've never found a great San Marzano STYLE can of tomatoes. But the Pomi cartons of diced tomatoes [amazon.com] are pretty decent. Sometimes I end up subbing them when making neopolitan pizzas if real San Marzano isn't available.

One way I like to determine this is to look at calories per serving (make sure serving size is the same or do math to find out otherwise) and compare it to whatever else you wanted to compare it to. More water, less calories per oz.

That's how I determined to buy the crushed version of a particular canned tomato when I was making sauce and wasn't sure which one to pick

Stock up on tomatoes. Was a bad year and with Ukraine you may be better off with freshly canned tomatoes if you know how to cook.
