Take impact sockets, for example. Usually you'll find that the premium brand that uses a high-quality steel will have thinner walls than those of a knockoff that uses cheaper steel. That barely affects the outer dimensions and weight (a good steel can weigh more than cheap steel), but among the downsides of the cheaper sockets is that those slightly thicker walls can make the socket too wide in tight spots. Now, apply that to the pliers wrench. Or watch at least the first minute or two of this:

Price, volume, and strength are generally the primary competing factors in tool steel. Knipex generally produces a stronger, less clunky wrench at a higher price, while HF compromises a little on strength and added bulk in favor of a lower price. Note that the cheaper steels also tend to dull, round, and deform faster. Whether any of this is worth the extra $20-30 is entirely up to you.

I should add that even some SDers might also value giving their business to the companies that engineer good tools rather than those that shamelessly rip them off. That's arguably less of an issue once they come off patent, though, and of course I'd never begrudge anyone whose tight budget makes going the knockoff route the only choice.

Isn't this like "the one?" The apex Knipex tool? And with this deal the same price as the Icon replica? Can someone tell me why or why not I should drop $50 on this? I feel like this tool is almost sacred to some people.

I have used the knipex and icon versions, the fit and finish is extreme. the icon is more bulky that the OG knipex

I use these almost everyday in my line of work as an aircraft mechanic. They are amazing tools and worth the money you pay for them. Personally, I would buy the combo set of these...but if you were just going to buy one, this one would be it. If you are a mechanic of any sort (tractor, aviation, car/truck, ect) these are really valuable.

I'm a DIY guy, live in an apartment so tools come at a premium as far as what I'd like to have vs what I want to lug up and down 3 flights of stairs.

These are a fantastic deal, as is the combo for ~$80-90. I'll basically be eliminating 3 adjustable wrenches with one, and this one will last years with much better fit on fittings and such.

If you haven't seen it in action, go watch videos and you'll see the importance of the mechanism vs the traditional slider type.

Buy once, cry once. Takes a bit to master the mechanism and start thinking of it as your go-to, but you'll soon appreciate the fit, finish, function, and resilience. There are knockoffs, but as others have said, they're usually bulkier, to make up for the lower-quality steel. That bulk can make them about as strong as the original, but at the expense of some nimbleness, and of course they'll wear down much faster.
