They are both among the best headphones for $200. Which one you prefer would be based on personal sound preference.
I had the HD650's for years so I was familiar with their sound and then purchased the Sundara more recently. The HD6xx is warmer/weightier and sounds more blunted/rounded, not as quick and sharp or open sounding as the Sundara. It sounds more laidback than the Sundara. The Sundara is more open sounding, transients are quicker, it feels more light and quick/airy as most planar magnetic do. But it's not in your face, it is still a laidback sounding headphone.
I personally prefer the HD6xx, but I could see why someone would like the Sundara more.
I wouldn't worry that much about impedance. You need an amp to get the best out of any headphone, but they are so inexpensive these days you can usually find a quality headphone amp on Craigslist or FB Marketplace from the likes of Schiit Audio, Topping, Monolith, JDS Labs, etc. for less than $100.
And if you were looking for a headphone for portable use, then you shouldn't be looking at either of these since they are open back.

Just make sure you don't drop it on a hard floor. And cables that come with these are a bit jumpy so I replaced them but that's about it.
I paired these with a iFi ZEN CAN - Balanced Desktop Headphone Amp. I do love how they sound with this combination. So clean and crisp without any harshness.
Typically the open magnetic planar are not the best with bass, but this combo brings it out if you want it. The Zen CAN is now an older model, but they likely have something similar.
You can play straight from your phone, but they sound much thinner to me. The Amp brings out the potential of these headphones.

FWIW, don't listen to people who say you need tons of power to drive headphones. Sure, some headphones need more power than others, but if your headphones are loud enough without maxing out the volume or causing audible dropouts or distortion, power is not the problem. But a different--not necessarily more powerful--amp or dac might still make it sound better, since there might be *other* problems with the amp or DAC design or implementation! But first...try PEQ.
*Balanced cables can be *very* helpful or even necessary for preserving quality in many circumstances, they're just usually overkill for headphones.
