inb4 Shun knives aren't as good as my wat pro or whatever. Especially when scored on a deal, Shun make fine knives.

There is a wide assortment available. For the most part they are 50% off, though some are higher - be cautious of the 'list price' of the kaji line though, which was a williams sonoma specific run.

Some of them are laser engraved with a small 'xxxx' below the shun logo on the knife, you can find examples of this online. Not all have the xxxx marking, the product page should state if there is a mark.

Some Examples:

Premier 6" Ultimate Utility - $76 (list $213)
https://shun.kaiusa.com/premier-u...ity-6.html

Kaji 7.5" Double Hollow Ground Sumo Santoku - $158 ("list" $450)
https://shun.kaiusa.com/kaji-doub...u-7-5.html OOS

Classic 7" Flexible Filet - $57 (list $163)
https://shun.kaiusa.com/classic-f...let-7.html OOS

Classic 9" Combination Honing Steel - $20 (list $63)
https://shun.kaiusa.com/classic-c...-9-ol.html

Dual Core 8" Kiritsuke - $206 (list $413)
https://shun.kaiusa.com/dual-core...uke-8.html

Large Higo No Kami - $57 (list $150)
https://shun.kaiusa.com/large-hig...mi-ol.html

Lots of the more common knife types and sizes available in the warehouse at 50% off, deal ends tomorrow

Ex Chef, lifetime cook. Everyone can give their own opinions and as such this is mine. I cook a lot. I use my knives several times a day. Currently have about 23 knives from Wusthof, Zwilling, Shun, Global, and a cheap faberware cleaver. Each one has its own purpose. People who say they chipped their Shun and that is why they are garbage used them improperly. You dont cut bone or frozen things with a Shun knife, that is what the German thick steel is for on my Zwilling.

Ive had my 7" Shun Santoku for 15 years and have sharpened it 6 times so far. It is still sharp as heck today as it was back then even though the Shun logo can no longer be seen from excess wear. I also have 6 other Shuns (Now 7!)

I just bought the Kanso Hollow Ground Brisket 12" knife for half price of everywhere else direct from Shun. For that Im happy. If you buy a knife and use it as a screwdriver dont expect it to last. But if you want a high end knife Shun makes a great product.
I'm not a fan of Shun because of the price point and the tendency to use VG-10, but they are still very high quality Japanese made knives. I really like the budget Kai knives, which are also on sale: https://housewares.kaiusa.com/war...-sale.html

I picked up the Kai Inspire paring last time and it's a great deal for $3 that rivals Kiwi for thin geometry on the cheap and surprisingly has rounded edges on the spine. Probably the only knife in the world with rounded spine at $3.

Any good basic knives for cutting up veggies and meats on a cutting board you'd recommend. I have a $10 basic chefs knife now that gets dull quickly

My first real knife was a shun. I was really excited about it. It was shit. I treated it like gold but the blade soon started to pit and now it is like a saw blade. Not sure if I just got a bad one but I wouldn't buy another. Too many other choices for that kind of money.

The strangest knife is the Premier Ultimate Utility 6" ... get an idea what it's used for from the reviews on Amazon: https://www.amazon.com/Shun-TDM07...merReviews

Japanese steel is softer, not sure why you were using it to cut steel beams

I've had mine 8 years, sharpened once with their free sharpening service ($5 plus ship)
Japanese steels are typically harder; hence, more brittle. Chip Happens!
