41mm bands all fit. If you're absolutely married to using the Apple band, you can buy it separately or reuse your old one.

Many people prefer third party bands, in which case, it makes no difference what it ships with.

Do we have to activate the cellular or can I still keep it connected to my phone? I am not really interested in paying any more $$ to the cellular companies

If you don't need the cellular then just get the GPS/wi-fi version. Those usually run for cheaper.

Yeah, the issue is. The cellular is $355 and Wi-Fi one is $349. I was thinking of buying the cellular so that in case I plan to use it in the future I can switch. The $ difference is not that big

Incorrect.
41mm bands do NOT fit 45mm watches.

I think the Wi-Fi one is likely going to drop lower. Walmart has the 41mm one for $299: https://slickdeals.net/f/16961383-299-apple-watch-series-8-gps-41mm-midnight-aluminum-case-with-midn...

Which would position the 45mm at $329. I agree though for just 20-30$ more then go for the cellular and have the option. I'm on Visible so it's only $5/mo for smartwatches - definitely worth trying out.
