It says we need to choose to use the 10,000 points for signing up ($10 bonus) either in store or online. Does anyone know if we can use those 10,000 points on an Xbox GC and if so would I need to do that in store or online?
We've been using the $5.00 monthly codes and buying $10 Xbox GC's but not sure if I can do that with these 10,000 points.

For Steam GC (and other online GC), you are out of luck. Starting February 2023, you cannot apply the $5 monthly reward to your online gift card purchase. You can use the monthly reward toward gift card purchase in-store, just not online

In the past, you could purchase (for example) a $5 Nintendo GC in-store for free. And then use the coupon again online to purchase a $10 Nintendo GC for $5 (no $5 GC was available online). So in effect, you could get a $15 GC each month for out-of-pocket $5 expense.
They've now changed this. The coupon still works online after having been used in-store, but the online validity is greatly reduced. In-store the coupon works for anything. But online, you cannot use it for GCs, or for on-sale merchandise or games. Only works for nonasale items.
Update - since you asked about Steam GCs. They only sell those in minimum $20 denominations. So you can get one for $15 out-of-pocket expense each month. But that purchase has to be made in-store.
