Which of these would be good for someone that's never played a Tales game but always been curious?
I'd recommend Vesperia since it allows you to free run in battles. Symphonia doesn't have that function and is more limited in its battle mechanics. If only they remade Tales of the Abyss, I'd recommend that
I'll fight against the tides by saying I vastly prefer Zestiria to Berseria, and even consider Zestiria one of my absolute favorite Tales games, story-wise.
For people who are new to the series however, I recommend Symphonia for its charm, or Vesperia for its, well, overall greatness (and I second someone else's comment about its battle system being more free-form).
As for why I dislike Berseria, I was actually highly anticipating it and couldn't wait for it to come out... only to find the main character intolerable. Much fanfare was made at first about the Tales series having a woman as a main character, which I was all about, but every time she laments her lot in the life, she talks about how much she wants to sweep, or mend things, or sweep again maybe... I got tired of hearing her basically lament not being a housewife. It was as if her creators had to balance out having this sometimes emo bad ass by reminding everyone she's a good little woman who wants to be stuck in the kitchen.
Also it's filled with environments with boring buildings and simplistic landscapes while Zestiria has more handcrafted locals. Vesperia, Abyss and Symphonia are where the special touches in world design really shine though.
TL;DR: Tales games are fun, these are good deals, I didn't check which ones are still in stock or not, but go with Vesperia and/or Symphonia if you're new.

Arise combat is fun and like watching an anime. But I personally still like Berseria a bit better though it is a bit older technically.
