Would this work for a home with three stories? Im not that good with tech so would this be a router and a mesh system all in one ?

AXE5300 or AX3000? I see the AX3000 supports wired backhaul of more than Gig speeds. Don't see that on the AXE5300. Anyone confirm?

Absolutely it will help. You put the main router onto your cable modem for example on the 1st floor. Then you connect the satellite (mesh router 1 on the 2nd floor) then connect the 3rd satellite (mesh router 2 to the third floor) so you will have a device on each floor and it will send the wireless throughout the whole house. This is the purpose of getting a Mesh system. All with seamless transfer from one router to the next as well. So as you go up the stairs to each floor, your phone/tablet will switch to the closest router so you get a stronger signal and faster internet to your device. You set it up with your wireless name and all 3 routers will use that same name. So no need to switch to another wireless network like with wireless extenders.

If you buy the wifi 6 mesh system, the wifi 6 is on it's own wireless channel. That means less interference from microwaves and tv signals to degrade the wifi, and your wireless will increase in speed in almost all situations. So less buffering on netflix/youtube for example. The Iphone 12 and newer have the wifi 6 antenna in the phones, you will take advantage of wifi 6 speeds.

The setup is done on the app when you first set it up, so it makes it really simple to follow the step by step setup.
