Bought an open box one 2 years ago from Best Buy for work for 650 after taxes and it's a workhorse for my job. Dents and all it's been amazing. When this one dies, I'll be getting another.
Anyone on the fence, the M1 is still an excellent computer with many years of life left. Even MKBHD is still using his M1 since M3 only offers very slight upgrades.
Also M1 is better than M2 due to the faster storage. I'd only buy the M2 for the 15".

I went with the m2 since I asked a similar question in another thread and someone suggested the m2 since it would get some more iOS update support.
I got it for like $850 during tax free week at Best Buy

The choice should be screen size. Is 13.3 large enough? Get M1. If she would like a larger screen then wait for a 15" M2 sale. They didn't make a 15" M1. It would be nice if this dropped a bit more to like $700. But its a super cheap entry into macOS.
