Depending on both the person's eyes and the types of things you want to shine the light on the color temperature makes a difference. higher temps are more blue, lower is white, yellow, then amber, red... Personally I have an eye issue where I see more natural light and have better night vision - I see more blue. So for something that would look normal with 5000K I might prefer 3000K light, if I had a blue deficiency higher temp. Also of note, blue light glares in the retina of the human eye, everyone's not just some - it becomes painful above a certain point whereas red/green wont due this. Some wavelengths of blue could also contain UV which isn't always ideal either. Lots of little things when it comes to illumination but for people who rely on illumination to really do work in dark places it's much like prefering one computer monitor to another or TV or car.
