japanese are hard steel to take a sharp edge but if you are a bit careless or someone tries to use them to do rocking motion cut on the cutting surface, it can chip the edge (and if that happens, yes you can sharpen it out make it disappear as long as it's not catastrophic, which if it were, either cutlery and more or yaxell would get you another knife.
The zwilling is designed for rocking motion cut, not gonna chip easy or at all, and frankly those are the most beautiful western design knives I have yet found (at least for more modern handle materials, F.Dick Wusthoff Messermeister and zwilling still offer some nice rusting looking wooden handle knives and even better if it's carbon steel so it can take on a beautiful patina. then you think ancestors from germany made this knife and it be family heirloom, it will look old/worn and no one will ever guess you are lying about the age ehehehe
If you want to pass on the german knives I linked to, you can get a victorinox fibrox it got excellent steel, is cheap so not the end of the world when it takes on wear, and you can use it to cut through soft bones frozen food and stuff, and not risk your super sharp put delicate japanese knives
