If you're doing professional work, the R6 has dual card slots so you can have an instant backup. It also has in-body stabilization, uses a bigger battery, and has a 3rd control dial.
The R8 is smaller, slightly higher resolution, has a higher max frames per second with its electronic shutter, and newer autofocus.
I have the R6 and love it. I also have an RP, which is closer to the size of the R8, and it's not enough smaller to make a difference in a bag, and the R6 is way more comfortable in my hands.

I've had my Nikon D3100 for ten years. Finally decided to get a mirrorless full frame. I'm mostly taking photos of family (including young kids) and friends. Rarely shoot any videos. I'm particularly excited about the improved autofocusing on modern cameras. I want a RP because of it's capability and crazy value. Now I'm wondering if I should get the R6 instead.
The R8 is one gen newer (better sensor, better AF) with some very intentional Canon cripple hammer limitations. It was at $1,199 or $1,099 a couple times over the past month. It'll be $999 or even lower "refurbished" next Thanksgiving. I'm not in a rush as I still have my EOS R (and barely use it).
