Recommend gyuto from Global, Shun, Tojiro, or any VG-10 steel if you are on a budget. If you do like SG2 steel, take a look at Miyabi Mizu deal from the same seller.

this is so me by the way, the most used knife in my kitchen is one i got in a slickdeal 15 years ago where it was FREE when you bought a nice cutting board. Its a total cheap knife that i hand sharpen every month to keep it usable. A much nicer knife sits at the front my my drawer in case i have company over.
