I thought I knew more about audio than the average audiophile, but you are over my head. I only know nitrates as fertilizers and preservatives linked with gastrointestinal cancers. What are we talking about nitrates here?
It's fairly common for blind testing to be done, just look it up.
But honestly, it's more fun if you try it yourself rather than reading someone else's tests (unless you are just trying to make the argument that an apple dongle is all you need).
The most basic use is a USB audio interface from your PC or Mac to play hi-res audio (PCM or DSD) without resampling or converting.
It goes between your computer and your preamp/sound system...via either single ended consumer RCA connections (lower, consumer voltage) or fully balanced (hotter, pro audio levels) XLR connections
It can also do a bunch of other things like receiving Bluetooth to your sound system, it can interface with a NAS, or store music on it and be a music server, and many other things
It can accept spdif from another source too and tune into streaming music services as a stand alone. No computer needed.
But personally, I wouldn't use a DAC with an android computer inside the same unit. There's just too much crap going on in that one box.

You have any links to any double blind tests where the analog outs were measured to be exactly the same volume and someone could 100% tell them apart?
No one tests DACs this way. If they did they would never be able to tell them apart. A DAC should be transparent and do nothing to the sound. If a DAC changes sound it has audible distortion and shouldn't be used.
The Eversolo is cool, but it being Android based is my concern. A network streamer that might stop getting security updates isn't what I want. The fact a Wiim Pro Plus is a third the price is also a deal killer unless you must have a screen.

Its not about the chips or equipment, its about how they are tuned. A high dollar dac tuned poorly will sound no better than a cheap ohe tuned perfectly.
FWIW, What Hi-Fi really liked this device. Personally I use Roon with raspberry pi or intel NUC endpoints with external DACs and phone as controller, but thinking of getting one of these to play with. Should be noted that it is close in price to Cambridge CXN V2 which is a more established model from a known company with better aesthetics.
It seems no one has pointed out some other big advantages of this unit. Put simply, if you've ripped all your music, this provides a very easy alternative to using PC/Mac to play your music. You can insert up to a 4TB M.2 SSD into this and use it to play all your lossless music. Additionally, it is one of the only players out there that can play DSD natively through HDMI (something no computer can do). This will be important to those using AVRs/receivers as you are typically required to use HDMI.
This is obviously a niche product aimed at audiophiles. It will especially liked by those with ripped SACD collections.
As for price, this is about $50 less than the lowest price I have ever seen on this unit.

Back in the day of CDs, audiophiles were all concerned with how the disc was recorded. AAD, ADD, and DDD. Or something along those lines. That's analog to analog to digital. Telarc used to have the best recorded, sounding CDs at the time. The focus now is on the end point. You still need a quality lossless recording to sound great. Not all CDs and sources sound the same. Look up the LP Aja and see how many pressings there are on youtube. Many audiophiles go insane looking for the holy grail of sound.
Here's a decent piece:

Edit: leaving original for comedic value, but I definitely meant bitrate not nitrate.
