While I respect your opinion and your choice to eat what you want to eat, folks, I have to state, this is the voice and mindset of luxury; a lifestyle that doesn't understand what it means to starve, to barely subsist. What you're advocating is a choice in an environment of plenty something so many non-Western people just can't understand.
If you were my mother, foraging for food in the jungles of Sumatra as a child during WWII while trying to avoid the Japanese, you ate what you found edible, regardless of condition or content. This mindset baffles me. I can only guess it exists because 1) they've never starved, literally and 2) they have plenty of food options and easy access.
Only ever started following him after his passing (and my own getting into cooking more).
Great show, I think they are also on some streaming services as well. I don't have any Apple devices or library, so I will pass for now. Hopefully Play Store matches at some point.

Read his book Kitchen Confidential, it's fantastic.
If you have a fire stick there is an Apple TV app for it. There are some shows I'd recommend on the service if you have any interest, but they really market their tv shows poorly.
