After adidas came out with ultraboost, Nike and other companies have come up with other foams which might be better (or not).
The ultraboost became very popular because that foam makes the shoe very comfortable, specially if you are planning to be standing for long amounts of time. For running, back when they came out, they became popular for professional runners. Nowadays there might be other shoes with newer and better tech.
One of the main complaints is that, compared to other newer foams ultraboost is heavier. To compete, adidas came up with Ultraboost Light wich is the same chemical but with a formula that makes it lighter, but still not the lightest in the industry.
The other reason these are popular here is the price. MSRP is around $180 to $170. Retail price usually is around $99 and above, specially for the all black ones. Thus, when people see them for $40 to $70 ish everyone jumps to get one.
Like every shoe, not everyone finds these comfortable, every foot is different. Thus, if you want to try them I suggest you buy them from a store that has free returns like the adidas ebay store. Or go to a retail store and try them out first. They tend to be tight for some people, and others found them to run a size smaller than advertised. In my case they fit comfortably with my regular size. At first they were tight around the ankle but after break-in period it adjusted and now I don't feel them tight.
Adidas.com gives you the option to try them for 30 days and lets you return them. Have never done that and don't know exactly how it works but check it out if you are interested.
